THOUSAND ISLAND
PRAWN SALAD

SERVES 4

INGREDIENTS

 800 g Breco Prawn Meat
Thousand Island sauce
 1 cup Mayonnaise
 ¼ cup Onion, minced
 2 tbsp Tomato sauce
 2 tbsp Sweet pickle relish
 1 tsp Lemon juice
 ½ tsp Sweet paprika
 ¼ tsp Salt
Salad
 2 cups Shredded lettuce, washed and dried
 120 g Wild rocket
 2 Spring onions with the tops, thinly sliced
 4 tsp Red peppers, chopped
 ½ cup Gherkins, chopped
 1 cup Fresh pineapple, cubed
 1 tsp Coriander, chopped
 Zest of 1 lemon
 1 tsp Garlic, grated
 ½ cup Celery, finely shredded
 2 tsp Green pepper, finely diced
 1 Red chilli, finely chopped
 300 ml Thousand Island sauce (as per recipe)

METHOD

Steam prawns lightly for 4 minutes. Do not overcook. Allow to cool.

Mix all ingredients well to combine.
*Tip: Feel free to buy your favourite brand of Thousand Island sauce from the shop!

To assemble salad

Mix together the shredded lettuce and wild rocket. Place it onto a serving platter.

Mix in the remaining ingredients with 300ml Thousand Island sauce and combine well.

Stir in the prawns and pile onto the bed of salad leaves.
