Steam prawns lightly for 4 minutes. Do not overcook. Allow to cool.

Mix together the shredded lettuce and wild rocket. Place it onto a serving platter.
Mix in the remaining ingredients with 300ml Thousand Island sauce and combine well.
Stir in the prawns and pile onto the bed of salad leaves.
