SERVES 4

INGREDIENTS

 3 x 80g packets of Breco Smoked Trout
 ½ English cucumber
 2 carrots peeled
 1 Golden Delicious apple finely dice
 4 radishes very thinly sliced
 ½ medium red onion peeled and thinly sliced
 1 tbsp chopped chives
 1 tbsp chopped dill
 1 ripe firm avocado pear sliced
 Extra 1 tsp chopped chives for garnish
 1 tsp toasted black sesame seeds (optional)

METHOD

Slice the trout into long thin ribbons. Using a vegetable peeler, slice the cucumber and carrots into long ribbons, place them into a bowl and toss together with the apple, radishes, onions, chives and dill. Pile cucumber mixture onto a platter and arrange the avocado over the top.

Arrange the trout ribbons on top of the avocado. Garnish with chives and black sesame seeds if you are using it.

Salad dressing (optional)
1 tsp wasabi paste
1 tsp sesame oil (optional)
2 tbsp Japanese or good quality mayonnaise
1 tsp honey or to taste
2 tbsp rice wine vinegar
Salt to taste

Mix all the ingredients together, taste and adjust the seasoning.
