Mediterranean style
SQUID RINGS

SERVES 4

INGREDIENTS

Squid rings:
 800 g Breco Squid Rings
 Salt ground
 White pepper
 Flour for dusting
 Oil for deep frying
Olive topping:
 50 g black olives chopped
 50 g green olives chopped
 20 g capers chopped
 1 tbsp chopped parsley
 1 tomato diced
 ¼ tsp cayenne pepper
 Zest of 1 lemon
 Juice of 1 lemon
 2 tbsp mayonnaise
 100 g rocket

METHOD

Season the squid rings with salt and pepper and dust lightly with flour. Heat the oil and fry the calamari in batches until golden and crisp. Drain on paper towel.

Mix together all the ingredients except the rocket.

Divide the rocket between four plates, add squid and top with olive mixture. Enjoy!
