BRAAI MUSSELS
IN GARLIC BUTTER PARCELS

SERVES 4

INGREDIENTS

 1 kg Whole mussels, cleaned
 100 g Butter, softened
 3 Garlic cloves, crushed
 30 ml (2 tbsp) Chopped fresh thyme
 Juice of 1 lemon
 Salt and pepper
 Lemon wedges, charred

METHOD

Mix the butter, garlic, thyme, lemon juice, salt and pepper.

Place mussels on large foil sheets. Dot with the garlic butter.

Seal foil into parcels. Place directly on braai for 10–12 minutes until steaming.

Open parcels at the table. Serve hot, with charred lemon wedges.
