APRICOT, LEMON
& Garlic Glaze

INGREDIENTS

 200 g Apricot jam
 100 g Butter
 3 Cloves crushed garlic
 10 g Finely chopped dill
 3 ml Crushed chilli (optional)
 Salt and pepper to taste
 Juice and zest of 1 lemon

METHOD

Gently heat all the ingredients together in a saucepan, stirring occasionally until smooth. Once heated through, set aside until ready to use.

To serve: Brush mixture over the snoek before and while braaiing. Serve with a fresh green salad and fresh brown or rye bread.
