Thousand Island Prawn Salad

INGREDIENTS

  • Serves 4

  • 800g Breco Prawn Meat - steamed for 4 minutes - Do not overcook. Allow to cool

For The Salad

  • 2 Cups washed and dried shredded Lettuce

  • 120g Wild Rocket

  • 3 Spring Onions - tops thinly sliced

  • 4 tsp Chopped Red Peppers

  • 1/2 Cup Chopped Gherkins

  • 1 tsp Chopped Coriander

  • Zest of 1 Lemon

  • 1 tsp Grated Garlic

  • 300ml Breco Thousand Island Sauce

  • 1/2 Cup finely shredded Celery

  • 2 tsp Finely diced Green Pepper

  • 1 Red Chilli finely chopped

  • METHOD:

  • Mix the shredded lettuce and wild rocket together - place onto a serving platter

  • Mix the remaining ingredients together to combine well

  • Stir in the prawns and pile them onto the bed of salad leaves
