Summer Crabstick Salad

INGREDIENTS

  • 2 cups cherry tomatoes, sliced in half

  • 6 Breco crabsticks, sliced into 12

  • 1/2 English cucumber, with skin on, cut into bite size chunks

  • 1 small red onion, peeled and thinly sliced

  • 1 small green apple cut into small chunks

  • 3 medium sized peeled potatoes, boiled, cooled and cubed

DRESSING:

  • 1 red chilli

  • chopped 2 cloves garlic

  • crushed 1/2 c fresh sweet basil

  • 2 tsp honey

  • 1/2 c rice vinegar 1 tsb

  • chopped coriander

  • 1/2 tsp salt 1/2 tsp freshly ground black pepper

  • 1 level tsp wasabi powder

  • 1 c olive oil

  • 3 tsb mayonnaise

  • METHOD:

  • Place all the ingredients for the salad in a large bowl Dress with the dressing and gently toss together When well coated, place onto a serving platter or onto individual plates
