Mango Crab Sticks Salad

INGREDIENTS

  • Serves 4

  • 1 medium red onion, diced

  • 1 red chilli, thinly sliced

  • Zest of 2 limes

  • 300g Breco Crab sticks shredded

  • 1 teaspoon toasted cumin seeds, roughly ground

  • ½ cup roughly chopped coriander

  • Juice of 2 limes

  • 1 tablespoon extra-virgin olive oil

  • ½ cup good quality or homemade mayonnaise

  • 1 teaspoon grated ginger

  • 1 large clove garlic, finely crushed

  • Salt and pepper, to taste

  • 1 large firm ripe mango, peeled and diced

  • METHOD:

  • Stir all the ingredients together, except the mango.

  • Once everything is well mixed, gently stir the mango in – take care not to mush it!
