Baked Sardines with Thyme and Roasted Lemon

INGREDIENTS

  • 8 Breco sardines cleaned and head on olive oil

  • 2 whole heads of garlic

  • 24 whole peppercorns

  • A handful of fresh thyme

  • 2 whole lemons

  • 2 whole red chillies

  • 1 cup black olives

  • 8 large wooden skewers

  • Coarse salt

  • METHOD:

  • Slice the heads of garlic across their middles

  • Drizzle with olive oil and bake for 25 minutes in a large shallow dish

  • Remove from the oven

  • Place the wooden skewer through the mouth of the sardine

  • Pack them into the same dish as the garlic was baked in

  • Add the peppercorns and strew with fresh thyme

  • Cut the lemons in half and squeeze the juice all over the sardines

  • Place the lemons cut side down in the dish salt the sardines, add the chillies and olives, drizzle with lots of olive oil

  • Bake at 200C for 8-10 minutes

  • Serve with the roasted garlic, a green salad and lots of crusty bread to soak up the juices You can also add a cup of cherry tomatoes
