Baby Kingklip with Seafood and Garlic Sauce

INGREDIENTS

  • Serves 4

  • 4 Medium sized Dressed Baby Kingklip

  • Salt and Pepper to taste

  • Flour for dusting

  • Oil for shallow frying

The Sauce

  • 2 tbls Butter

  • 1 tsp Fresh Thyme Leaves

  • 1 tsp Chopped Fresh Rosemary

  • 2 tsp Chopped Fresh Basil (Optional)

  • Breco Seafood and Garlic Sauce

  • METHOD:

  • Season the Kingklip with Salt and Pepper, dust with flour

  • Heat some oil in a non-stick frying pan and fry the fish in batches, till cooked through and golden

  • Drain on a paper towel and keep warm while the sauce is made


  • The Sauce

  • Place the Butter in a small sauce pan and gently warm the Butter with the chopped Herbs

  • Stir in the Breco Seafood and Garlic Sauce - stir together with the Butter and Chopped Herbs, well

  • Serve with crushed New Potatoes and Minted Peas
