Stir Fried Tiger Prawns with Sicky Rice

INGREDIENTS

  • Serves 4

  • 2 tbls olive or sunflower oil

  • 5 spring onions with tops chopped

  • 1 carrot peeled and diced

  • 1 red pepper diced

  • 2 tsp grated ginger

  • 1 red chili chopped

  • 2 cloves crushed garlic

  • 1 tbls sweet chili sauce

  • Zest of 1 ripe lemon

  • 2 tbls honey

  • 2 tbls soy sauce

  • 4 tbls lemon juice

  • 800 g Breco Sea tiger prawns cleaned

  • 3 tbls Chopped fresh coriander

  • Cooked sticky rice to serve

  • METHOD:

  • Heat the oil in a saucepan and add the spring onions,carrot,red peppers,ginger, chili and garlic, cook stirring for 3 minutes, stir in the sweet chillie sauce, lemon zest, honey,soy sauce and lemon juice ,cook stirring for 1 minute and now add the prawns and cook till they are pink and succulent, remove from the heat ,stir in the coriander and serve with boiled sticky rice.
