Oak Smoked Snoek Paté Recipe


  • 500g Breco smoked snoek, boned, skinned, flaked

  • 300g potatoes peeled, boiled and mashed

  • 1/2 cup lemon juice

  • 3 cloves crushed garlic

  • 1 cup olive oil

  • 3 tsb freshly chopped Italian parsley

  • 2 spring onions with tops chopped

  • 1 small red chili Salt to taste (if necessary)

  • Freshly ground black pepper

  • 100g cold butter

  • 1/2 cup cream


  • Place all the ingredients into a blender and blend until smooth.

  • Spoon into individual ramekins and smooth the surface.

  • Chill until needed.

  • To serve, place each ramekin on a plate and drizzle the top with olive oil, garnish with a sprig of thyme and serve with fresh brown or rye bread.
