Crumbed Squid Strips with Yakitori Dipping Sauce

INGREDIENTS

  • Yakitori Sauce

  • 1 tsb peanut oil

  • 3cm cloves garlic peeled and roughly chopped

  • 6 tsb light soy sauce

  • 8 tsb chicken or fish stock

  • 3 tsb brown sugar

  • 1tsb honey

  • 5 tsb white wine

  • 3 tsb sweet sherry

  • 2 spring onions with tops thinly sliced

  • 1 small red chilli diced (optional)

  • 1 tsb chopped coriander

  • 1 tsb chopped fresh mint

  • METHOD:

  • Heat the oil in a small saucepan and add the ginger and garlic

  • Cook stirring for about 2 minutes, do not burn

  • Add the remaining ingredients and cook gently until the sauce reduces and is nice and syrupy

  • Serve with deep fried crumbed Breco squid rings

  • This sauce can be used for the crumbed squid rings and squid strips
